Ingredients

    • 1 cup oats

    • 2 eggs

    • Salt and pepper to taste

    • Olive oil for frying

For the Cream Sauce:

    • 1 cup heavy cream

    • 1/2 cup grated cheese

    • 1 tablespoon butter

    • Salt and pepper to taste


Instructions

For the Fritters:

    1. Start by grating the eggplant and place it in a clean kitchen towel to squeeze out excess liquid.

    1. In a mixing bowl, combine the grated eggplant, oats, shredded cheese, chopped fresh cilantro, eggs, salt, and pepper. Mix thoroughly until well combined.

    1. Heat a skillet over medium heat and add a bit of olive oil for frying.

    1. Take a portion of the fritter mixture and shape it into a patty. Place it in the skillet and gently press down to flatten.

    1. Cook the fritters for 3-4 minutes on each side or until they are golden brown and cooked through. Repeat with the remaining mixture.

For the Cream Sauce:

    1. In a small saucepan, combine Greek yogurt, grated  cheese, olive oil, salt, and pepper.

    1. Heat the sauce over low heat, stirring continuously until the cheese is melted and the sauce is smooth and creamy.

    1. Adjust the seasoning to taste if needed.
