    • 2 tablespoons milk (for glaze)

    • Mint leaves for garnish (optional)


Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the buttermilk, vegetable oil, egg, vanilla extract, peppermint extract, and food coloring if using.
  4. Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Fill Muffin Tin: Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
  6. Bake: Bake for 12-15 minutes or until a toothpick inserted into the center comes out clean.
  7. Prepare Glaze: While the muffins cool, mix the powdered sugar and milk in a small bowl until smooth.
  8. Glaze Muffins: Drizzle the glaze over the cooled muffins and garnish with mint leaves if desired. Serve and enjoy!
