This dish is so simple and yet so flavorful. Fresh basil pesto is mixed with parmesan cheese and extra-virgin olive oil. It's the perfect summer meal! The best part is that it can be made in under 30 minutes. So if you're ever in a pinch for time, this is the sauce to make.

To make Fresh basil pesto, you will need:
-1 bunch of fresh basil leaves, washed and dried
-½ cup olive oil
-½ cup grated Parmesan cheese
-¼ cup pine nuts
-3 cloves of garlic, peeled and minced
-Salt and pepper to taste

- Place the basil leaves, olive oil, Parmesan cheese, pine nuts, garlic, salt and pepper in a food processor or blender.
- Pulse until the ingredients are combined and the basil is finely chopped.
- If the pesto is too thick, add more olive oil.
- Taste and adjust the seasoning as necessary.
Serve immediately or store in an airtight container in the refrigerator for up to one week. - Note: Fresh pesto can also be frozen for up to six months.
