Instructions
- Prepare the Ingredients: Gather all the ingredients listed above and chop the vegetables as needed.
- Cook the Sausage: In a non-stick skillet over medium heat, cook the diced sausage until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
- Cook the Eggs: In the same skillet, add a small amount of olive oil or cooking spray if needed. Crack the eggs into the pan and scramble them gently with a spatula. Cook until the eggs are set but still moist, about 2-3 minutes. Season with salt and pepper to taste.
- Saute the Vegetables: In the same skillet, add a little more oil or cooking spray if needed. Add the diced bell peppers and onions to the pan and sauté until they are softened and slightly caramelized, about 3-4 minutes. Then, add the chopped spinach or kale and diced tomatoes to the skillet and cook for an additional 1-2 minutes until the vegetables are heated through and wilted.
- Warm the Tortillas: While the eggs and vegetables are cooking, warm the tortillas by placing them directly on a gas burner or in a dry skillet over medium heat. Cook for about 20-30 seconds on each side until they are warmed through and slightly charred.
- Assemble the Tacos: Place a portion of the scrambled eggs onto each tortilla, followed by a spoonful of the sautéed vegetables and cooked sausage. Top each taco with avocado slices and shredded cheese, if using.
- Add Optional Toppings: Garnish the tacos with optional toppings such as salsa, Greek yogurt or sour cream, fresh cilantro, and a squeeze of lime juice.
- Serve and Enjoy: Serve the healthy breakfast tacos immediately while they're warm and enjoy this nutritious and delicious meal to kickstart your day!
