Ingredients

    • 4 whole wheat or corn tortillas

    • 4 large eggs

    • 1/2 cup diced bell peppers (any color)

    • 1/4 cup diced onion

    • 1/2 cup diced tomatoes

    • 1/2 cup chopped spinach or kale

    • 4 ounces cooked sausage, diced

    • 1 avocado, sliced

    • 1/4 cup shredded reduced-fat cheese (optional)

    • Salt and pepper to taste

    • Olive oil or cooking spray for cooking

    • Greek yogurt or sour cream

Instructions

  1. Prepare the Ingredients: Gather all the ingredients listed above and chop the vegetables as needed.
  2. Cook the Sausage: In a non-stick skillet over medium heat, cook the diced sausage until browned and cooked through, about 5-6 minutes. Remove from the skillet and set aside.
  3. Cook the Eggs: In the same skillet, add a small amount of olive oil or cooking spray if needed. Crack the eggs into the pan and scramble them gently with a spatula. Cook until the eggs are set but still moist, about 2-3 minutes. Season with salt and pepper to taste.
  4. Saute the Vegetables: In the same skillet, add a little more oil or cooking spray if needed. Add the diced bell peppers and onions to the pan and sauté until they are softened and slightly caramelized, about 3-4 minutes. Then, add the chopped spinach or kale and diced tomatoes to the skillet and cook for an additional 1-2 minutes until the vegetables are heated through and wilted.
  5. Warm the Tortillas: While the eggs and vegetables are cooking, warm the tortillas by placing them directly on a gas burner or in a dry skillet over medium heat. Cook for about 20-30 seconds on each side until they are warmed through and slightly charred.
