Instructions
🔥 Step 1: Preheat the Oven and Prep the Sheet
Preheat your oven to 425°F (220°C). If you’re using a pizza stone, place it in the oven now to preheat—this helps give the crust a crisp bottom. If using a baking sheet, line it with parchment paper and set it aside.
Tip: Preheating the pizza stone or baking sheet is key to avoiding a soggy crust.
🧄 Step 2: Make Garlic Olive Oil
In a small skillet, heat 2 tablespoons of olive oil over medium-low heat. Add 1 clove of minced garlic and sauté gently for about 1–2 minutes, just until the garlic becomes fragrant. Remove from heat immediately so it doesn't burn.
Tip: Garlic burns quickly—if it starts to brown, take it off the heat right away.
🍞 Step 3: Assemble the Base
Place your flatbread on the lined baking sheet (or a pizza peel if using a stone). Using a pastry brush or spoon, spread the garlic oil evenly over the surface of the flatbread, covering all edges.
Sprinkle 1 cup of shredded mozzarella over the top, making sure to leave a ½-inch border around the edges.
Add 1 cup of baby spinach or arugula, evenly distributing it on top of the cheese. Don’t worry if the greens seem to pile up—they’ll shrink as they bake.
Finish with a sprinkle of ¼ cup grated Parmesan, then season with a little salt, pepper, and optional red pepper flakes.

Create three shallow wells in the bed of cheese and greens. These will help keep the eggs from sliding off the crust.
Crack each egg into a small bowl first (to check for shells), then carefully pour an egg into each well.
Tip: Pouring from a bowl gives you better control than cracking directly onto the pizza.
🔥 Step 5: Bake the Pizza
Place the pizza in the oven and bake for 10 to 14 minutes, or until:

Remove from oven and let cool for 2–3 minutes. This helps the cheese settle and the crust firm up.
