Irish Beer and Oat Soda Rolls

Ingredients

1-1/4 c. all-purpose flour
1/2 c. rolled oats
3/4 t. salt
1 t. baking soda
3/4 c. dark beer
1/4 c. buttermilk
3 T. vegetable oil
1-1/2 T. molasses or honey
1 T. rolled oats or sesame seeds to sprinkle on top of rolls


Instructions

Preheat the oven to 400°F. Line a rimmed baking sheet with a piece of parchment paper for easy cleanup.

In a large bowl, combine flour, rolled oats, salt, and baking soda.

In a separate container, whisk together the wet ingredients - beer, buttermilk, oil, and honey.

Pour the liquid ingredients into the dry ingredients and mix well. The mixture will be wet and sticky.

Using a large spoon, dollop 6 semi-round balls of the mixture onto the prepared baking sheet. Use the spoon to help shape them into a circular shape.

Top the rolls with oats or sesame seeds and transfer into the oven to bake until golden brown, approximately 18-20 minutes.

Allow to cool for at least 15 minutes at room temperature. Serve with butter, jam, cream cheese, or your desired spreads and toppings.
