Description

Irresistible Mushroom Quesadilla is a celebration of earthy flavors and cheesy goodness that promises to delight the taste buds with every bite. This mouthwatering creation features a medley of sautéed mushrooms, including cremini, shiitake, and portobello varieties, seasoned to perfection with aromatic herbs and spices.


Ingredients

    1. 2 large Whole wheat tortillas

    1. 1 tablespoon Olive oil

    1. 2 cups Mushrooms,(cremini, shiitake, portobello), sliced

    1. 1/2 cup Onion, thinly sliced

    1. 2 cloves Garlic, minced

    1. 1 cup Spinach leaves

    1. 1 cup Shredded cheese (such as mozzarella or cheddar)

    1. Salt (to taste)

    1. Black pepper (to taste)

    1. Optional: Sliced bell peppers or jalapeños for added flavor and nutrition


Instructions

    1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.

    1. Once the oil is hot, add 2 cups of sliced mushrooms and cook for 5-7 minutes until they start to brown.

    1. Add 1/2 cup of thinly sliced onion and 2 minced cloves of garlic to the skillet. Cook for an additional 2-3 minutes until the onions are soft and translucent.

    1. Stir in 1 cup of spinach leaves and cook until wilted, about 1-2 minutes. Season with salt and black pepper to taste.

    1. Remove the mushroom mixture from the skillet and set aside.

    1. In the same skillet, place one whole wheat tortilla and sprinkle half of the shredded cheese (about 1/2 cup) evenly over the tortilla.

    1. Spread half of the mushroom mixture over the cheese.

    1. Top with the remaining shredded cheese (about 1/2 cup) and place the second tortilla on top to form a quesadilla.

    1. Cook the quesadilla for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted and gooey.

    1. Once cooked, transfer the quesadilla to a cutting board and let it cool for a minute before slicing into wedges.

    1. Serve hot with optional sliced bell peppers or jalapeños, salsa, guacamole, or sour cream on the side for dipping, if desired.
