For the Salsa:

    • 1 cup diced tomatoes

    • 1/2 cup diced red onion

    • 1/2 cup diced bell pepper (any color)

    • 1/4 cup chopped fresh cilantro

    • 1 jalapeño, seeded and minced (optional)

    • Juice of 1 lime

    • Salt to taste

For the Sandwich:

    • 4 whole-grain sandwich buns

    • 1 avocado, sliced

    • 4 large lettuce leaves

    • 1/4 cup Greek yogurt (optional, as a spread)

    • 1/2 cup shredded carrots (optional, for extra crunch)


Instructions

Prepare the Fish:

    1. Season the Mahi Mahi fillets:
        • In a small bowl, mix together the olive oil, garlic powder, smoked paprika, salt, and pepper.

        • Brush this mixture evenly over both sides of the Mahi Mahi fillets.

    1. Cook the fish:
        • Preheat a grill or grill pan over medium-high heat.

        • Grill the Mahi Mahi fillets for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

        • Remove the fish from the grill and let it rest.

Prepare the Salsa:

    1. Combine the salsa ingredients:
        • In a medium bowl, combine the diced tomatoes, red onion, bell pepper, cilantro, jalapeño (if using), lime juice, and salt.

        • Mix well and set aside to let the flavors meld.

Assemble the Sandwich:
