    • 1/4 cup diced onions (optional)

    • 1 tablespoon chopped fresh herbs (such as parsley or chives)


Instructions

    1. Preheat your oven to 375°F (190°C). Roll out the pie crust and use a round cutter or glass to cut out circles slightly larger than the size of your mini muffin tin cups.

    1. Lightly grease a mini muffin tin or line with paper liners, then gently press the pie crust circles into each cup, forming mini pie crusts.

    1. In a mixing bowl, whisk together the eggs, milk, salt, and pepper until well combined.

    1. Stir in the diced ham, shredded cheese, bell peppers, onions, and chopped fresh herbs until evenly distributed.

    1. Pour the egg mixture into the prepared mini pie crusts, filling each one about 3/4 full.
