A mushroom spinach quesadilla is a type of quesadilla that contains mushrooms, spinach, and cheese. It is a popular dish in many Mexican restaurants. The quesadilla is made by first layering a tortilla with cheese, then adding the mushrooms and spinach.


  • four flour tortillas,
  • one cup of shredded cheese
  • two cups of chopped mushrooms
  • two cups of spinach
  • one tablespoon of olive oil
  • 2 tsp. cumin
  • ½ teaspoon cayenne pepper
  • salt and pepper to taste.


  • Heat the olive oil in a skillet over medium heat.
  • Simply sauté the mushrooms and spinach in olive oil until they're soft,
  • then season with cumin, cayenne pepper, salt, and pepper.
    -- Next, add the spinach and cook until it is wilted.
  • Once the mushrooms and spinach are cooked, remove them from the skillet and place them in the tortilla.
  • Add the shredded cheese on top of the mushroom and spinach.
  • Finally, fold up the tortilla and cook in the skillet until the cheese is melted and the tortilla is golden brown.
