Description

- four flour tortillas,
- one cup of shredded cheese
- two cups of chopped mushrooms
- two cups of spinach
- one tablespoon of olive oil
- 2 tsp. cumin
- ½ teaspoon cayenne pepper
- salt and pepper to taste.
Instructions
- Heat the olive oil in a skillet over medium heat.
- Simply sauté the mushrooms and spinach in olive oil until they're soft,
- then season with cumin, cayenne pepper, salt, and pepper.
-- Next, add the spinach and cook until it is wilted. - Once the mushrooms and spinach are cooked, remove them from the skillet and place them in the tortilla.
- Add the shredded cheese on top of the mushroom and spinach.
- Finally, fold up the tortilla and cook in the skillet until the cheese is melted and the tortilla is golden brown.
