This salad is made with cooked orzo pasta, cherry tomatoes, Kalamata olives, feta cheese, and fresh parsley. It is then tossed in a simple lemon dressing.


Ingredients

Scale
    • 1 cup of orzo pasta
    • 1 cup of cherry tomato, diced
    • ½ cucumber, diced
 
    • 1 cup Kalamata olives, pitted and chopped
    • ¼ cup feta cheese, crumbled
    • 1 tablespoon olive oil
 
    • 1 clove of garlic, minced
    • ¼ teaspoon salt
    • ¼ teaspoon black pepper
 
    • 1 Roasted Red Bell Pepper
    • 8 ounces feta cheese, cubed.
 
  • 1 small red onion, finely chopped

Optional:
4 tablespoons parsley, well chopped

DIRECTIONS:
This Orzo Salad is a light and refreshing dish that is perfect for a summer picnic. The orzo pasta is tossed with diced tomatoes, cucumber, Kalamata olives, feta cheese, and a simple dressing of olive oil, vinegar, garlic, salt, black pepper, and lemon. To make the salad, simply

 
    • Cook the orzo according to package directions.
    • Once it is cooked, drain it and rinse it with cold water.
    • In a large bowl, combine the cooked orzo with the diced cherry tomatoes, cucumber, Kalamata olives, roasted red pepper, feta cheese, and lemon dressing.
 
  • Toss gently to combine.

Serve at room temperature or chilled.
