    The key to a good risotto is to use high-quality rice, and I prefer arborio or carnaroli. Peas are traditionally used in this dish, but you can also add other vegetables like asparagus or fava beans. To make the risotto, start by sauteing some chopped onion in olive oil until it is softened. Then, add the rice and cook for a few minutes until it is coated with the oil and beginning to turn opaque. Next, add a ladleful of hot broth and continue to cook, stirring frequently, until the broth is absorbed. Continue adding broth in this way until the rice is cooked through but still al dente. Finally, stir in some grated Parmesan cheese and some freshly cooked peas. Serve immediately with a sprinkle of more Parmesan on top.

    making arborio rice is a simple process that anyone can do. To make arborio rice for four people, you will need:

    • -2 cups of arborio rice
    • -4 cups of water
    • -1 tablespoon of olive oil
    • -1 teaspoon of salt

    Directions


    MAKING the rice

    • - bring the water to a boil in a large pot. 
    • - Then, add the arborio rice and stir to combine.
    • - Next, add the olive oil and salt, and stir again. 
    • - Finally, cover the pot and reduce the heat to low. 
    • - Simmer for 18 minutes, or until the rice is tender and cooked through. 
    • When finished, remove from heat and fluff with a fork. 

    Continue:

    • - sauté the onion in a bit of olive oil over medium heat until it is softened. 
    • - Then, add the rice and continue to cook for a minute or two more. 
    • - Next, add the vegetable broth, one cup at a time, stirring frequently until each cup is absorbed. 
    • - After the final cup of broth has been added, stir in the peas and Parmesan cheese. 
    • - Season to taste with salt and pepper, 

    and serve immediately.
