Description
Rich Coffee Brownies are a delightful twist on the classic brownie, infusing the decadent treat with the robust, aromatic flavors of coffee. The addition of coffee intensifies the chocolate flavor and adds a sophisticated depth that is both satisfying and comforting. Making these brownies is delightful and can be accomplished with standard pantry ingredients.
Ingredients
1/2 c. butter, melted
3/4 c. cold coffee - consider decaf
2/3 c. cocoa powder
3 large eggs
2 t. vanilla extract
1 1/2 c. sugar
3/4 c. flour
1/2 c. dark chocolate chips
Flakey sea salt (optional)
Melted white chocolate, to garnish
Fresh cherries, to garnish
Instructions
Preheat the oven to 350°F degrees F. Line a 9x13-inch pan with a piece of parchment paper.
In a large bowl, whisk together the butter, coffee, and cocoa powder until very smooth.
Add the eggs, one at a time, whisking between each addition. Stir in the vanilla and sugar.
Using a large spoon or a spatula, gently fold in the flour, mixing just until combined.
Pour the batter into the prepared pan and sprinkle with the chocolate chips.
Transfer into the oven and bake until the brownies form a crust on top and a toothpick inserted into the center comes out mostly clean – with just a few moist crumbs.
Remove from the oven and allow to cool completely, preferably overnight.
To serve, drizzle the brownies with melted white chocolate and top with fresh cherries. Slice into squares and enjoy!
