Ingredients
1 large cauliflower head, broken into smaller florets
1 t. curry powder
½ t. ground cumin
½ t. smoked paprika
2 T. olive oil
Sea salt and black pepper, to taste
2 c. hummus (homemade or store-bought)
2 c. red cabbage, thinly sliced
1 medium cucumber, thinly sliced
2 radishes, thinly sliced
½ c. pickled red onions (or fresh red onion)
1 c. fresh parsley, chopped
Pita bread or crackers, for serving
Instructions

Preheat the oven to 400°F.

For easy clean-up, line a large rimmed baking sheet (like this one https://amzn.to/3i77xPC) with a piece of parchment paper.

In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt and black pepper, to taste.

Arrange florets on the prepared baking sheet. Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.

Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
