    • Roasted Cauliflower and Hummus Nourish Bowl

    Ingredients

    • 1 large cauliflower head, broken into smaller florets
    • 1 t. curry powder
    • ½ t. ground cumin
    • ½ t. smoked paprika
    • 2 T. olive oil sea salt and black pepper, to taste
    • 2 c. hummus (homemade or store-bought)
    • 2 c. red cabbage, thinly sliced
    • 1 medium cucumber, thinly sliced
    • 2 radishes, thinly sliced
    • ½ c. pickled red onions (or fresh red onion)
    • 1 c. fresh parsley, chopped
    • Pita bread or crackers, for serving

    Instructions

    1. Preheat the oven to 400°F. 
    2. For easy clean-up, line a large rimmed baking sheet (like this one https://amzn.to/3i77xPC with a piece of parchment paper.
    3. In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt, and black pepper, to taste. 
    4. Arrange florets on the prepared baking sheet. Place in the oven to roast until fork-tender and crispy around the edges, 20-25 minutes.
    5. Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions. 
    6. Garnish with fresh parsley. Serve with pita bread for dipping. Enjoy!
