- ½ t. smoked paprika

- 2 c. hummus (homemade or store-bought)
- 2 c. red cabbage, thinly sliced
- 1 medium cucumber, thinly sliced
- 2 radishes, thinly sliced
- ½ c. pickled red onions (or fresh red onion)
- 1 c. fresh parsley, chopped
- Pita bread or crackers, for serving

- Preheat the oven to 400°F.

- In a large bowl, toss cauliflower florets with curry powder, ground cumin, smoked paprika, olive oil, salt, and black pepper, to taste.

- Place a large dollop of hummus in the bottom of each serving plate. Follow with roasted cauliflower, red cabbage, cucumber slices, radishes, and pickled red onions.
