For the Flatbread Base:

  • 1 large flatbread or naan

For the Tomato Paste Sauce:

  • 2 tablespoons water

  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste

Toppings:

  • 1/4 cup crumbled feta cheese
  • 1/4 cup shredded mozzarella cheese (optional)
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup cucumber, diced
  • 2 tablespoons red onion, thinly sliced
  • 2 tablespoons Kalamata olives, sliced
  • 1/4 cup roasted red peppers, sliced
  • 1/4 cup sliced mushrooms (button, cremini, or portobello)
  • 1 tablespoon capers (optional)

For Garnish:

  • Fresh parsley or basil, chopped
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil (for drizzling)
  • 1/2 tablespoon balsamic glaze (optional, for finishing)


Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C). If you have a pizza stone, place it in the oven to heat up.

Step 2: Prepare the Mushrooms

  1. Heat a small pan over medium heat and add 1 teaspoon olive oil.

  2. Add the 1/4 cup sliced mushrooms and a pinch of salt and pepper.

  3. Sauté for 3–4 minutes until the mushrooms are tender and lightly browned. Set aside.

Step 3: Prepare the Tomato Paste Sauce

  1. In a small bowl, mix 2 tablespoons tomato paste and 2 tablespoons water until smooth.

  2. Heat 1 tablespoon olive oil in a small pan over medium heat.

  3. Add 1 minced garlic clove and sauté for 30 seconds until fragrant.

  4. Stir in the tomato paste mixture, 1/2 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/4 teaspoon red pepper flakes (if using), and a pinch of salt and pepper.

  5. Cook for 2–3 minutes, stirring occasionally, until the sauce is well combined and slightly thickened. Remove from heat and set aside.

Step 4: Prepare the Flatbread

  • Place the flatbread or naan on a baking sheet or pizza stone.

  • Brush the surface lightly with 1 tablespoon olive oil.

Step 5: Add the Sauce

  • Spread the prepared tomato paste sauce evenly over the flatbread, leaving a small border around the edges.

Step 6: Add the Cheese

  • Sprinkle 1/4 cup crumbled feta cheese evenly over the sauce.

  • If using mozzarella, add 1/4 cup shredded mozzarella for extra cheesiness.

Step 7: Add the Toppings

  • Scatter the following toppings evenly over the flatbread:

    • 1/4 cup halved cherry tomatoes

    • 1/4 cup diced cucumber

    • 2 tablespoons thinly sliced red onion

    • 2 tablespoons sliced Kalamata olives

    • 1/4 cup sliced roasted red peppers

    • 1/4 cup sautéed mushrooms

    • 1 tablespoon capers (if using)

Step 8: Bake the Flatbread

  • Place the flatbread in the preheated oven and bake for 10–12 minutes, or until the edges are golden and the cheese is melted (if using mozzarella).

Step 9: Garnish and Serve

  • Remove the flatbread from the oven and let it cool for 2–3 minutes.

  • Garnish with:

    • Chopped fresh parsley or basil

    • 1/2 teaspoon dried oregano

    • A drizzle of 1 tablespoon olive oil

    • A drizzle of 1/2 tablespoon balsamic glaze (optional, for a sweet-tangy finish)

Step 10: Slice and Enjoy!
