Ingredients
For the Flatbread Base:
- 1 large flatbread or naan
- 1 tablespoon olive oil (for brushing)
For the Tomato Paste Sauce:
- 2 tablespoons tomato paste
- 2 tablespoons water
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
Toppings:
- 1/4 cup crumbled feta cheese
- 1/4 cup shredded mozzarella cheese (optional)
- 1/4 cup cherry tomatoes, halved
- 1/4 cup cucumber, diced
- 2 tablespoons red onion, thinly sliced
- 2 tablespoons Kalamata olives, sliced
- 1/4 cup roasted red peppers, sliced
- 1/4 cup sliced mushrooms (button, cremini, or portobello)
- 1 tablespoon capers (optional)
For Garnish:
- Fresh parsley or basil, chopped
- 1/2 teaspoon dried oregano
- 1 tablespoon olive oil (for drizzling)
- 1/2 tablespoon balsamic glaze (optional, for finishing)
Instructions
Step 1: Preheat the Oven

Preheat your oven to 400°F (200°C). If you have a pizza stone, place it in the oven to heat up.
Step 2: Prepare the Mushrooms

Heat a small pan over medium heat and add 1 teaspoon olive oil.

Add the 1/4 cup sliced mushrooms and a pinch of salt and pepper.

Sauté for 3–4 minutes until the mushrooms are tender and lightly browned. Set aside.
Step 3: Prepare the Tomato Paste Sauce

In a small bowl, mix 2 tablespoons tomato paste and 2 tablespoons water until smooth.

Heat 1 tablespoon olive oil in a small pan over medium heat.

Add 1 minced garlic clove and sauté for 30 seconds until fragrant.

Stir in the tomato paste mixture, 1/2 teaspoon dried oregano, 1/2 teaspoon dried basil, 1/4 teaspoon red pepper flakes (if using), and a pinch of salt and pepper.

Cook for 2–3 minutes, stirring occasionally, until the sauce is well combined and slightly thickened. Remove from heat and set aside.
Step 4: Prepare the Flatbread

Place the flatbread or naan on a baking sheet or pizza stone.

Brush the surface lightly with 1 tablespoon olive oil.
Step 5: Add the Sauce

Spread the prepared tomato paste sauce evenly over the flatbread, leaving a small border around the edges.
Step 6: Add the Cheese

Sprinkle 1/4 cup crumbled feta cheese evenly over the sauce.

If using mozzarella, add 1/4 cup shredded mozzarella for extra cheesiness.
Step 7: Add the Toppings

Scatter the following toppings evenly over the flatbread:

1/4 cup halved cherry tomatoes

1/4 cup diced cucumber

2 tablespoons thinly sliced red onion

2 tablespoons sliced Kalamata olives

1/4 cup sliced roasted red peppers

1/4 cup sautéed mushrooms

Step 8: Bake the Flatbread

Place the flatbread in the preheated oven and bake for 10–12 minutes, or until the edges are golden and the cheese is melted (if using mozzarella).
Step 9: Garnish and Serve

Remove the flatbread from the oven and let it cool for 2–3 minutes.
