- 12 ounces spaghetti

- 3 tablespoons extra virgin olive oil

- 4 cloves garlic, thinly sliced

- 1/2 teaspoon red pepper flakes (adjust to taste)

- 2 links Italian sausage (sweet or spicy), casings removed and crumbled

- Salt, to taste

- 1/2 cup freshly grated parmesan cheese

- Chopped fresh parsley, for garnish
Instructions
- Cook the Spaghetti: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- Sauté the Sausage: In a large skillet, heat the olive oil over medium heat. Add the crumbled sausage and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- Sauté the Garlic: In the same skillet, add the sliced garlic and red pepper flakes. Sauté until the garlic is golden and fragrant, about 1-2 minutes. Be careful not to burn it!
- Combine Everything: Add the drained spaghetti to the skillet, along with the cooked sausage. Toss to combine, adding reserved pasta water as needed to create a light sauce. Season with salt to taste.
- Serve: Remove from heat and stir in the grated parmesan. Serve immediately, garnished with extra parmesan and chopped parsley.
