Strawberry and Watermelon Gazpacho

Description

Gazpacho is a refreshing soup made from raw veggies and fruits, blended together until smooth.  It's the perfect dish for a summer day when produce is at its peak.  This strawberry and watermelon gazpacho recipe is both sweet and savory, with a hint of heat from the jalapeño peppers.  And it's incredibly easy to make - just throw all of the ingredients into a blender and blend until smooth.  Serve chilled, garnished with some fresh herbs or diced watermelon. 


Ingredients

    •  1 cup diced strawberries 
    • - 1 cup diced watermelon 
    • - ½ cup diced cucumber 
 
    • - ¼ cup diced tomato 
      ¾ teaspoon minced mint 
    • - 1 jalapeño, seeded and chopped ( optional )
    • - 2 tablespoons of lime juice 
 
  • - 1 tablespoon of red wine vinegar 
  • - ¼ cup chopped red onion 
  • - salt to taste 

Instructions

    • combine strawberries, watermelon, cucumber, jalapeño ( optional ), red onion, mint, lime juice, and red wine vinegar in a blender or food processor and blend until smooth. 
    • Season to taste with salt and pepper, then chill in the refrigerator for at least one hour.
 
  • Serve cold with a garnish of your choice. Whether you're looking for a light starter or a unique side dish, this strawberry and watermelon gazpacho is sure to please. 
    decorate with some mint.
