Ingredients
1/2 c. + 2 T. sweetened condensed milk
2 t. pure vanilla extract
3 1/2 c. unsweetened shredded coconut
2 T. sugar
4 oz. white chocolate, melted
Instructions
Preheat the oven to 350°F. Line a rimmed baking sheet with parchment paper for easy clean up or use a silicone baking mat
In a large bowl, whisk together the sweetened condensed milk, and vanilla extract. Stir in the shredded coconut and sugar and mix well.
Scoop the mixture using a cookie scoop (https://amzn.to/44dcudh) or a large tablespoon and drop onto the prepared baking sheet. You will get approximately 8 to 10 medium-sized coconut macaroons.
Transfer into the oven and bake until the cookies are deeply golden brown and slightly crisp, approximately 15-20 minutes.
Remove from the oven and allow to cool completely on a baking rack before drizzling with white chocolate. Place in the refrigerator until the chocolate is set.
