Description

Zucchini noodles with meatballs and olives is a great dish for any zucchini lover. The zucchini noodles are a great way to get your zucchini fix, and the meatballs and olives add a nice flavor to the dish.


Ingredients

ingredients:

  • 1 pound ground beef,
  • ½ cup chopped onion,
  • ¼ cup gluten-free bread crumbs,
  • 1 egg,
  • 1 teaspoon salt,
    2 tablespoon coconut milk,
  • ¼ teaspoon black pepper,
  • 1 zucchini, ( store-bought shredded, or shred yourself)
  • 2 tablespoons olive oil, and
  • ¼ cup pitted black olives.
    1 jar of Marinara Sauce

Instructions

In a large bowl,

  • mix together the ground beef, onion, bread crumbs, egg, salt, milk, and pepper. -Shape into small meatballs.
  • In a large skillet over medium heat, cook the meatballs in olive oil until browned all over and cooked through
    Add the Marinara Sauce.
  • Spiralize the zucchini into noodles.
  • Cook for 3-5 minutes until tender and add to the pan.
  • Add the olives and serve.
