Zucchini noodles with meatballs and olives is a great dish for any zucchini lover. The zucchini noodles are a great way to get your zucchini fix, and the meatballs and olives add a nice flavor to the dish.

- 1 pound ground beef,
- ½ cup chopped onion,
- ¼ cup gluten-free bread crumbs,
- 1 egg,
- 1 teaspoon salt,
2 tablespoon coconut milk, - ¼ teaspoon black pepper,
- 1 zucchini, ( store-bought shredded, or shred yourself)
- 2 tablespoons olive oil, and
- ¼ cup pitted black olives.
1 jar of Marinara Sauce
Instructions
In a large bowl,
- mix together the ground beef, onion, bread crumbs, egg, salt, milk, and pepper. -Shape into small meatballs.
- In a large skillet over medium heat, cook the meatballs in olive oil until browned all over and cooked through
Add the Marinara Sauce. - Spiralize the zucchini into noodles.
- Cook for 3-5 minutes until tender and add to the pan.
- Add the olives and serve.
