    Ingredients:

    • 2 tablespoons olive oil
    • 1 bell pepper, diced
    • 1 zucchini, diced
    • 1 red onion,
      2 garlic cloves,
    • 6 eggs
    • salt and pepper to taste
      dressed mixed salad

    Instructions:

    1. Preheat the oven to 375 degrees Fahrenheit.
    2. In a large skillet over medium heat, heat the olive oil.
    3. Add the bell pepper and zucchini and cook until soft, about 5 minutes.
