Description
This recipe for Caprese Bowtie Pasta Salad is perfect for a healthy and delicious dinner. It’s full of vibrant flavors, like tangy cherry tomatoes, creamy mozzarella chunks, and a hint of garlicky basil pesto.
Ingredients
8 oz. bowtie pasta
1 c. corn, fresh or frozen
3 T. pesto, homemade or store-bought
1 T. extra-virgin olive oil
½ large lemon, juiced
¼ c. fresh basil, chopped + more for garnish
Sea salt and black pepper, to taste
2 c. cherry tomatoes, halved
8 oz. Ciliegine or Pearl fresh mozzarella
Instructions

Cook pasta according to package directions in salted boiling water, adding corn during the last 3 minutes of cooking time.

Drain the pasta and add to a large mixing bowl. Add pesto, olive oil, lemon juice, and fresh basil.

Stir to combine and season with sea salt and black pepper, to taste.

Add the tomatoes and mini mozzarella balls. Gently stir and refrigerate for 30 minutes to marry flavors before serving.

Garnish with additional fresh basil. Enjoy!
Notes
Fresh mozzarella comes in many sizes. For testing purposes, Ciliegine was used in this recipe which is approximately the size of a cherry tomato. If fresh mozzarella balls such as Ciliegine or Pearls are not unavailable in your area, simply cut your mozzarella into ½” cubes.
