Ingredients needed to make Caprese Bowtie Pasta Salad
8 oz. bowtie pasta
1 c. corn, fresh or frozen
3 T. pesto, homemade or store-bought
1 T. extra-virgin olive oil
½ large lemon, juiced
¼ c. fresh basil, chopped + more for garnish
Sea salt and black pepper, to taste2 c. cherry tomatoes, halved
8 oz. Ciliegine or Pearl fresh mozzarella
Instructions for making Caprese Bowtie Pasta Salad
- Cook pasta according to package directions in salted boiling water, adding corn during the last 3 minutes of cooking time.
- Drain the pasta and add to a large mixing bowl. Add pesto, olive oil, lemon juice, and fresh basil.
- Stir to combine and season with sea salt and black pepper, to taste.
- Add the tomatoes and mini mozzarella balls. Gently stir and refrigerate for 30 minutes to marry flavors before serving.
- Garnish with additional fresh basil. Enjoy!

Notes
Fresh mozzarella comes in many sizes. For testing purposes, Ciliegine was used in this recipe which is approximately the size of a cherry tomato. If fresh mozzarella balls such as Ciliegine or Pearls are not unavailable in your area, simply cut your mozzarella into ½” cubes.
