- ½ c. Whole milk
- ½ c. Beer
- 2 t. Dijon mustard
- ½ t. Smoked paprika
- 2 oz. Cream cheese
- 8 oz. Sharp cheddar cheese, shredded
- Sea salt and black pepper, to taste
- Thinly sliced scallions, for serving
- Pretzels and crusty bread, for serving

- Melt butter in a medium saucepan over medium heat.
- Add flour and cook, stirring constantly, for 1-2 minutes, just until the raw flour taste cooks out. It will turn into a thick paste.
- Slowly pour in the milk, stirring constantly.

- Continue cooking for another minute.
