into ½-inch slices (about 2½ cups)
1 15-oz. can chickpeas,
rinsed and drained
¼ cup tahini
¼ cup fresh lime juice
¼ cup olive oil
1 Tbsp. chopped canned
chipotle pepper 1n adobo
sauce
1 tsp. ground.cumin-1 tsp. salt

Directions
1• In a large saucepan cook sweet potatoes, covered, in enough boiling water to cover 12 to 15 minutes or until very tender; drain. Let cool slightly.
- In a food processor combine
drained potatoes and the next seven ingredients (through salt). Process until smooth, scraping sides as needed. - Top with toasted pepitas
