    Chipotle-lime sweet potato hummus is a delicious, healthy snack that is perfect for when you are on the go. This hummus is made with roasted sweet potatoes, tahini, lime juice, and chipotle peppers in adobo sauce. It is the perfect combination of spicy and tangy.     Ingredients

    1 lb. sweet potatoes, peeled and cut
    into ½-inch slices (about 2½ cups)
    1 15-oz. can chickpeas,
    rinsed and drained
    ¼ cup tahini
    ¼ cup fresh lime juice
    ¼ cup olive oil
    1 Tbsp. chopped canned
    chipotle pepper 1n adobo
    sauce
    1 tsp. ground.cumin-1 tsp. salt

    Directions

    1• In a large saucepan cook sweet potatoes, covered, in enough boiling water to cover 12 to 15 minutes or until very tender; drain. Let cool slightly.

    1. In a food processor combine
      drained potatoes and the next seven ingredients (through salt). Process until smooth, scraping sides as needed.
    2. Top with toasted pepitas
