    Baked Zucchini Fries with a Greek Yogurt Dipping Sauce

    Appetizers are the perfect way to start a meal or to enjoy a light snack. And what could be more delicious than oven-baked zucchini fries? These crispy little bites are coated in a light batter and then baked to perfection.

    Baked Zucchini Fries with a Greek Yogurt Dipping Sauce

    Serve them with a dipping sauce made from Greek yogurt, garlic, and herbs for an extra zing. Your guests will be coming back for more!

    A healthy and easy recipe to make

    Craving something salty and crunchy but trying to eat healthy? These baked zucchini fries are the perfect solution! They're easy to make and only require a few simple ingredients. Plus, they're baked instead of fried, so you don't have to feel guilty about indulging. The Greek yogurt dipping sauce is the perfect finishing touch. It's creamy and tangy, with a hint of garlic. Yum! Whether you're looking for a healthy snack or a side dish to accompany your main course, these zucchini fries are sure to hit the spot.

    Ingredients needed to make Baked Zucchini Fries with a Greek Yogurt Dipping Sauce

    • 2 medium zucchini, halved and sliced into matchsticks, excess seeds removed
    • 2 large eggs, beaten sea salt, and black pepper, to taste
    • ½ c. panko breadcrumbs
    • ½ c. parmesan cheese, finely shredded
    • Cooking spray
    • Yogurt Dipping Sauce:
    • 1 c. Greek yogurt
    • 1 T. lemon juice
    • ½ c. fresh parsley, chopped
    • ½ c. fresh dill, chopped
    • Sea salt and black pepper, to taste

    Instructions for making Baked Zucchini Fries with a Greek Yogurt Dipping Sauce

    1. Preheat the oven to 400°F and line a large, rimmed baking sheet with parchment paper. Set aside..
    2. In a shallow dish or pie pan, gently whisk the eggs together. Season with salt and pepper, to taste. 
    3. In a second shallow dish or pie pan, combine panko and parmesan cheese.  
    4. Dip each zucchini piece into the beaten egg mixture. Allow excess egg to drain off each piece before transferring to the bowl of seasoned breadcrumbs to dredge. Turn to evenly coat each piece of zucchini before transferring to the prepared baking sheet. 
    5. Arrange zucchini fries on baking sheet. Season with additional salt and black pepper, if desired. Lightly spray with cooking spray.
    6. Place in the oven to roast until golden-brown and crisp, 25-30 minutes, flipping halfway through the baking time. 
    7. In the meantime, whisk Greek yogurt, lemon juice, parsley, and dill in a medium bowl. Season with salt and pepper to taste.
    8. Serve the hot zucchini fries alongside the Greek yogurt dipping sauce. Enjoy!

    Variations

    When it comes to baked zucchini fries, there are variations to suit every taste.     Storage

    Baked Zucchini Fries with Greek Yogurt Dipping Sauce can be stored in the fridge for up to four days. After that, they should be thrown out.
