- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 cups chicken or vegetable broth
- 1 can diced tomatoes, undrained
- 1 can black beans, drained and rinsed
- 1 teaspoon chili powder
- 1 teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup frozen corn
- 1 avocado, diced
- 1 jalapeño pepper, seeded and diced
- ¼ cup chopped fresh cilantro

- Heat the oil in a large pot over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes.
- Add the broth, tomatoes, black beans, chili powder, cumin, salt, and black pepper and bring to a boil.
- Reduce the heat to low and simmer for 30 minutes.
- Stir in the corn and avocado and cook until heated through, about 5 minutes.
- Ladle into bowls and top with the jalapeño, cilantro, and any other desired toppings. Enjoy!
