Making a large batch of Spiced Carrot Lentil Soup can be a great way to meal prep for dinner or enjoy leftovers for brunch. Fortunately, storage and refrigeration of this delicious soup are easy! If stored properly in an airtight container, it can safely remain in the fridge for up to three days. However, if you want an estimate based on your own recipe or taste, always trust your nose first! If you open the storage container and it smells off or strange, it's probably time to toss the batch. To keep all those precious spices safe and give yourself more storage time, aim to freeze any leftover soup and stand by that three-day rule!
Firstly, opt for hearty green lentils rather than split red ones – this will give your soup a thicker and more flavourful consistency.
Secondly, keep an eye on the carrots while they’re cooking. You want them to get that delicious sweetness but not burn or become mushy!
Lastly, double the recipe and save some for your next brunch or dinner –
this Spiced Carrot Lentil Soup keeps well and tastes even better the next day.
