    Escarole Apple Dijon Pork Chops are a great way to change up your pork chop routine!     Ingredients

    Ingredients:

    -1½ pounds pork chops
    -1 head of escarole, chopped
    -1 tart apple, chopped
    -1 tablespoon Dijon mustard
    -1 tablespoon apple cider vinegar
    -2 tablespoons olive oil
    -salt and pepper to taste

    Directions

    Directions:

    1. Preheat oven to 400 degrees.
