It's practically impossible not to adore this delightful loaf of bread. Thanks to honey as a natural sweetener, it's incredibly delicious without being overly sweet. Adding juicy blueberries lends a lovely sweetness to the loaf, enhancing its natural flavor. Here at HH, we strive to minimize using cane sugar whenever possible, although sometimes necessary, especially when preparing my mom's cherished Greek dessert recipes.
I'm always delighted to prepare this loaf for my family, as it incorporates wholesome ingredients like whole wheat flour, honey, Greek yogurt, avocado oil, blueberries, and lemon. To ensure a smooth texture, ensure your eggs and yogurt are at room temperature before mixing. You can opt for any liquid sweetener such as honey, maple syrup, or agave—it all works beautifully. I prefer using 5% fat Greek yogurt for added richness.

Ingredients needed to make Lemon bread
- 1 ½ cups whole wheat flour
- 1 teaspoon baking powder (preferably aluminum-free)
- ½ teaspoon baking soda
- ¼ teaspoon salt (preferably sea salt or Himalayan pink salt)
- ⅓ cup raw honey or pure maple syrup
- ¼ cup avocado oil or extra virgin olive oil
- 2 large eggs, preferably free-range or organic, at room temperature
- ½ cup plain Greek yogurt (preferably low-fat or non-fat), at room temperature
- Zest of 1 organic lemon
- Juice of 1 organic lemon
- 1 cup fresh organic blueberries, washed and dried
Directions for making Lemon bread
- Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan with cooking spray or line it with parchment paper.
- In a large mixing bowl, whisk together the whole wheat flour, baking powder, baking soda, and salt until well combined. Set aside.
- In another mixing bowl, whisk together the honey (or maple syrup) and avocado oil (or olive oil) until smooth and well combined.
- Add the eggs to the honey-oil mixture, one at a time, beating well after each addition.
- Stir in the Greek yogurt, lemon zest, and lemon juice until smooth and creamy.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
- Gently fold in the fresh blueberries until evenly distributed throughout the batter.
- Pour the batter into the prepared loaf pan and spread it out evenly with a spatula.
- Bake in the preheated oven for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the loaf from the oven and allow it to cool in the pan for 10-15 minutes.
- Carefully transfer the loaf to a wire rack to cool completely before slicing.
