Brie Cranberry Pecan Flatbread with Hot Honey

Some appetizers are made for passing around politely. This isn't really one of them.

Set this Brie cranberry pecan flatbread down while it's still warm and somebody is going to reach for one of those corner pieces with the browned Brie and extra pecans. Then someone else will want to know what's in the honey.

That's the kind of food I like when people are gathered around the kitchen — something that looks as though you planned ahead, without requiring you to disappear into the kitchen while everyone else is talking.

And this flatbread gives us a lot for very little work.

We start with ready-made flatbread instead of making dough. Brie melts into creamy pockets across the top. Dried cranberries give us sweet-tart bites without making the crust wet, pecans toast while everything bakes, and rosemary keeps the whole thing firmly on the savory side.

Then there's the hot honey.

• Save

Don't pour it on yet.

That's one of those small details that makes the finished flatbread better. Bake first, give the Brie a couple of minutes to settle, and then drizzle. The crust stays crisper and that warm honey lands where we actually want it — on top.

💡 Lightbulb Tip: If you're making this for company, do the chopping and slicing before anyone arrives. Once the Brie is sliced, the pecans and rosemary are chopped, and the hot-honey ingredients are measured, there's very little left to do. You get to be part of the gathering instead of spending it at the stove.

❤️ Why This Flatbread Works

Here's what I especially like about this recipe: it can change depending on who's sitting at the table.

Cut it into small pieces and you have an appetizer people can pick up with their hands. Cut it into larger wedges and add a crisp salad, and it becomes an easy lunch or light supper.

• Save

If someone doesn't like spicy food, leave the hot honey off part of the flatbread and use regular honey instead. No need to make a second appetizer.

There's also a reason the combination works so well.

Brie is rich and creamy. Honey is sweet. If that were the entire story, the flatbread could become heavy pretty quickly.

Instead, the cranberries bring tartness, rosemary pulls things back toward savory, and toasted pecans interrupt all that softness with crunch.

That's the bite we're trying to build: crisp, creamy, sweet, tart, nutty and just a little spicy.

🧀 What You'll Need

This is a short ingredient list, so there's nowhere for the ingredients to hide. Each one has a job.

Flatbread

Naan, pita or another sturdy pre-made flatbread will work.

I like something substantial enough that you can pick up a warm slice without the toppings folding into your lap. Naan gives you a slightly softer, chewier center; a thinner flatbread gives you more crunch.

Neither is wrong. Just remember that thinner bread may brown faster.

Brie Cheese

You need 8 ounces (225 g) of Brie.

And no, you don't have to stand there peeling the rind from the cheese. The rind is edible and can stay on.

What matters more is how you slice it.

Thin pieces distributed over the flatbread will soften much more evenly than a few big chunks. You don't have to completely blanket the bread in cheese, either. Brie spreads as it warms.

Why a Soft-Cheese Knife Helps With Brie

You can slice Brie with an ordinary kitchen knife, but the creamy cheese tends to cling to a broad, solid blade. A perforated soft-cheese knife has less surface area touching the Brie, helping each thin piece release more cleanly instead of folding or sticking to the knife.

Keep the Brie chilled until you are ready to slice it. The firmer cheese is easier to portion evenly, and those similarly sized pieces will soften at approximately the same rate in the oven.

A small cheese knife is also useful for serving baked Brie, goat cheese and holiday cheese boards. It is the kind of compact serving utensil that makes a practical hostess gift or addition to a charcuterie set.

Dried Cranberries

The dried cranberries give us concentrated sweet-tart flavor without bringing much moisture to the party.

That's important. We're trying to make a crisp flatbread, not bread soaked with toppings.

Pecans

Roughly chop the pecans rather than turning them into tiny crumbs.

I want to know when I've bitten into one.

They'll toast while the flatbread bakes, giving us a much-needed crunch against all that soft Brie.

Fresh Rosemary

A tablespoon of finely chopped rosemary may not look like much, but don't underestimate it.

Brie, cranberries and honey all lean rich or sweet. Rosemary is what reminds your palate that we're making a savory appetizer.

Hot Honey

Our quick version uses honey, red pepper flakes and just a touch of apple cider vinegar.

That vinegar may seem like an odd little addition, but it helps cut through the sweetness. You shouldn't taste “vinegar.” You should simply notice that the honey doesn't feel quite as one-dimensional.

💡 Lightbulb Tip: Don't like spicy food? Don't abandon the recipe. Use plain warm honey. You'll lose the little kick of heat, but the Brie-cranberry-pecan combination still works beautifully.

🍕 How to Make Brie Cranberry Pecan Flatbread

1. Give the Flatbread a Head Start

Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Place two flatbreads on the pan and lightly brush the tops with 1 tablespoon olive oil.

• Save

Now put them into the oven without any toppings for about 3–5 minutes.

This is the step I'd be tempted to skip if I were in a hurry — and it's the one I wouldn't skip.

Once we add Brie, we're putting warm, melting cheese over bread. Giving the bare flatbread those few minutes in the oven first helps create a firmer surface underneath it.

We're not trying to brown it completely. Think of this as a head start.

💡 Lightbulb Tip: Par-baking is your insurance against a floppy flatbread. Pull it when the surface has just begun to feel crisp; it still needs another 8–10 minutes in the oven later.

2. Build the Flatbread

Take the pan from the oven and arrange the thinly sliced Brie over the flatbreads, leaving a small border around the edges.

Scatter over ⅓ cup dried cranberries, followed by ⅓ cup roughly chopped pecans and 1 tablespoon finely chopped fresh rosemary.

• Save

Try to resist piling all the good stuff into the center.

I know that's where toppings naturally seem to land, but spread them out. When we slice this later, we want the edge pieces to get some Brie and cranberry too.

And keep an eye on those pecans around the very outside. A nut sitting completely exposed at the edge of the bread can toast faster than one nestled into the cheese.

3. Bake Until It Looks Right

Return the pan to the oven and bake for 8–10 minutes.

• Save

Here's where I'd rather have you look at the flatbread than stare at the timer.

The Brie should look very soft and creamy, with some bubbling. The pecans should smell toasted. And the exposed edges of the flatbread should be golden brown.

Don't wait for a mozzarella-style cheese pull.

Brie doesn't melt like mozzarella. It softens, slumps and becomes beautifully creamy. That's what we want.

💡 Lightbulb Tip: Flatbreads vary in thickness, so use 8 minutes as your first checkpoint, not a command to remove the pan. Look at the crust and cheese. They're better judges than the clock.

🍯 Make the Hot Honey While the Flatbread Bakes

This is a good use of those few minutes when the oven is doing all the work.

Combine:

• 3 tablespoons honey
• ½ teaspoon red pepper flakes
• ¼ teaspoon apple cider vinegar

Warm the mixture in a microwave-safe bowl for about 15–20 seconds, just until the honey loosens enough to drizzle.

Give it a good stir.

We're warming the honey, not cooking it.

When the flatbread comes out of the oven, wait about 2 minutes before drizzling.

I know. Two minutes doesn't sound important.

But cutting immediately into molten Brie can send the toppings sliding around the bread. Give the cheese a moment to settle, drizzle over the warm honey, and then slice.

💡 Lightbulb Tip: Serving people with different heat tolerances? Put the hot honey in a small pitcher or bowl and let everyone add their own. It's a tiny change that makes this much easier to serve to a group.

🔄 What Can You Change?

One thing I don't want a simple recipe like this to do is send you to the grocery store because you're missing one ingredient.

If I had walnuts in the pantry, I wouldn't make a special trip for pecans.

Use them.

Pecans are a little sweeter and more buttery, while walnuts give you a slightly earthier flavor. What we really need is that toasted-nut crunch against the creamy cheese.

If you don't have fresh rosemary, I'd rather use a smaller amount of dried rosemary than substitute an unrelated herb just for the sake of it. Dried rosemary is stronger, so use it with a lighter hand.

You can also finish the baked flatbread with a handful of fresh arugula. Put it on after the flatbread comes out of the oven. The peppery leaves are particularly good against rich Brie and sweet honey.

And if you're curious about using another cheese, goat cheese takes this in a tangier direction. It won't melt exactly like Brie, but fruit and goat cheese make very good neighbors. My Blueberry Goat Cheese Flatbread shows that combination in a different way.

🍒 What About Cranberry Sauce?

This is one substitution I'd approach carefully.

Dried cranberries and cranberry sauce may have the same fruit in the name, but they behave very differently on bread.

Dried cranberries give us chewy little pockets of flavor.

• Save

Cranberry sauce gives us moisture.

That doesn't mean you can't use it. If there's leftover cranberry sauce in your refrigerator, I'd use small dollops rather than spreading it over the entire flatbread.

Remember what we've been working so hard to protect: that crisp base.

🥗 What Would I Put Next to It?

If this flatbread is the star appetizer, I wouldn't surround it with three more rich, sweet cheese dishes.

Give people some contrast.

A simple green salad works if you're turning it into lunch. For an appetizer table, think olives, crisp vegetables or something salty and savory between bites.

• Save

Our Italian Antipasto Skewers with Tortellini make sense on the same table because the salami, vegetables and tortellini take your palate somewhere different before you come back for another piece of warm Brie.

For another fruit-and-cheese appetizer, there are also my Pear and Brie Crostini.

• Save

I probably wouldn't serve the crostini and this flatbread together unless I were intentionally putting together a Brie-centered spread. They're better thought of as two ideas for the same kind of occasion.

That's the point of a pairing: helping you build a table, not simply finding another recipe with the same ingredient.

🕐 Can You Make It Ahead?

Yes — but prep it ahead, don't bake it ahead.

That's an important distinction.

Earlier in the day, you can slice the Brie, chop the pecans, chop the rosemary and measure the hot-honey ingredients.

Then put everything away until you're ready.

When people are actually ready to eat, par-bake the flatbread, add the toppings and finish it in the oven.

You get most of the convenience of a make-ahead appetizer without sacrificing the thing that makes this particularly good: warm creamy Brie sitting on crisp bread.

❄️ What About Leftovers?

I'll choose this fresh from the oven every time, but leftovers don't need to go to waste.

Store them in an airtight container in the refrigerator for 2–3 days.

When you want another piece, reheat it in a 350°F (175°C) oven or toaster oven for about 5–7 minutes.

I wouldn't reach for the microwave unless speed matters more than texture.

The microwave can certainly make the Brie warm again. What it can't do very well is give you that crisp bottom back.

💡 Lightbulb Tip: Only reheating one or two pieces? Use the toaster oven. There's no reason to heat the whole kitchen, and the dry heat does a much better job of waking the crust back up.

❓ A Few Questions Before You Start

Do I need to remove the rind from Brie?

No. The rind is edible and can stay right where it is. Concentrate instead on cutting the Brie into relatively thin pieces so it softens evenly.

How do I stop my flatbread from getting soggy?

Give it the 3–5 minute par-bake before adding the toppings, and don't overload it with cheese or wet ingredients.

Can I use walnuts instead of pecans?

Absolutely. If they're already in your pantry, use them.

Can I use cranberry sauce?

Yes, but use small dollops rather than a thick layer. It contains considerably more moisture than dried cranberries.

Does the hot honey make this very spicy?

It should give you warmth rather than turn the flatbread into a genuinely hot dish. Pepper flakes vary, though. Start conservatively when cooking for other people—you can always add more.

Can I leave off the hot honey?

Yes. Plain honey is the easiest substitute, and you can also serve the flatbread without a drizzle.

Can I make this for lunch instead of an appetizer?

Definitely. Cut it into larger wedges and put something fresh beside it—a green salad is enough to turn it into a simple light meal.

❤️ One Last Bite

When you take that first piece, pay attention to what makes you go back for the second one.

It probably isn't just the Brie.

It's the cranberry you hit halfway through the bite. The pecan that stayed crunchy. A little rosemary. Then that sticky bit of honey at the edge with just enough pepper to make you notice it.

That's why I wouldn't bury this flatbread under extra toppings.

Let those few ingredients do their jobs.

Bring it to the table warm, put it where everybody can reach it, and make sure you take your own piece before you walk back into the kitchen.
