• 1 tablespoon lemon juice
• 1 teaspoon paprika
• ½ teaspoon salt

🧠 Ingredient Notes

Sea Scallops

Choose large dry-packed sea scallops whenever possible. Dry scallops caramelize better and contain less added moisture.

Bacon

Thin-cut bacon works best. Thick-cut bacon often finishes cooking after the scallops are already done.

Lemon Juice

Fresh lemon brightens the richness of the bacon and butter.

Paprika

Adds color and a subtle smoky flavor that complements the bacon beautifully.

🔪 How To Choose The Best Scallops

When shopping for scallops, look for:

• Dry-packed scallops
• Slightly translucent appearance
• Fresh ocean scent
• Firm texture
• No excessive liquid in packaging

Avoid scallops that appear overly white, watery, or smell strongly fishy.
