    The Frozen Pina Colada is a cocktail holiday classic. Perfect for sipping during any celebration, the icy and sweet blend of pineapple juice, coconut cream, and rum will make any holiday party special.

    Enjoy it either as a mocktail with no alcohol, or add your favorite rum or another spirit to create a more adult drink. No matter how you serve up the Frozen Pina Colada, it'll be sure to be a hit at your holiday gathering!

    How good is Frozen Pina Colada?

    There is no denying the goodness of a Frozen Pina Colada! Whether you are enjoying the sun on the beach or cozying up by the fire, this sweet and frozen concoction is the perfect complement to your day. It's creamy, it's smooth, and its icy coldness will bring a sense of joy and relaxation making it an ideal treat during the summer when the heat really picks up. The sweetness combined with the tartness from the pineapple makes it all the more scrumptious and enjoyable for everyone, young and old alike. Could there be anything better?

    Ingredients needed to make Frozen Pina Colada

    Sugar-Free Simple Syrup:

    ¼ c. powdered monk fruit sweetener
    ½ c. water Ingredients:

    2 c. frozen pineapple chunks (see note above)
    8 oz. pineapple juice
    ⅓ c. coconut cream
    4 oz. light rum
    6-8 ice cubes

    Garnish: Fresh pineapple slices

    Instructions for making Frozen Pina Colada

    1. Prepare the simple syrup by combining the powdered monkfruit sweetener and water in a small skillet. Stir to combine and heat until the sweetener dissolves completely, approximately 3-4 minutes. Remove from heat and set aside to cool.
    2. Place the frozen pineapple, pineapple juice, coconut cream, rum, and one-quarter cup simple syrup into a blender and blend until smooth.
    3. While the blender is still running, add the ice a little at a time until the desired consistency is reached.
    4. Turn blender off and remove lid. Taste and add additional simple syrup, if desired, and blend for another 30 seconds to combine.
    5. To serve, pour into glasses and serve immediately garnished with fresh pineapple slices. Enjoy!

    Variations

    There are many variations you can use when making Frozen Pina Colada cocktails. To make a basic mocktail version, simply omit the alcohol and double the amount of coconut cream. If desired, you can also add a splash of pineapple juice to give it a punch of sweetness. For those who prefer their cocktails on the lighter side, replace some of the pineapple-coconut fruit juice with club soda for an irresistible fizzy refresher.     Notes

     

    Mocktail version:

    Omit the rum and replace with 1 oz. coconut cream and 3 oz. pineapple juice before blending.
