Instant Pot Chicken & Tortellini Base: Flavor-Packed Starter
Tender cubes of chicken are pressure‑cooked in your Instant Pot for quick, juicy results. The tortellini cooks alongside or separately until perfectly al dente, creating the foundational layers of flavor and texture for these skewers.

Chicken & Tortellini = Mediterranean Harmony: Olives, Tomatoes & Italian Dressing
Once cooked, chicken and tortellini are combined with halved grape tomatoes and black olives—then lightly dressed in Italian vinaigrette, salt, and pepper. This mix brings vibrant color, tangy brightness, and classic Mediterranean flair.

Skewer Assembly: Signature Layering for Visual & Taste Impact
Using 10–12″ wooden skewers, the pattern is olive → tomato → chicken → tortellini → chicken → tortellini → tomato → olive. This order ensures symmetry and a delightful bite sequence in every skewer.

🥢 How to Make Chicken and Tortellini Skewers (Step-by-Step)
These chicken and pasta skewers are easy to prep ahead, full of Mediterranean flavor, and perfect for casual entertaining. Here’s exactly how to make them:
✅ Step 1: Marinate the Chicken for Flavor
Place boneless, skinless chicken breasts in a large freezer bag. Add 2 tablespoons of Italian dressing, seal the bag, and turn the chicken to coat evenly. Marinate in the refrigerator for at least 30 minutes, flipping the bag halfway through for even absorption.
⚙️ Step 2: Cook Chicken in the Instant Pot
Add the removable rack to your Instant Pot®. Place the marinated chicken on the rack. Pour in 1 cup of water, then sprinkle the chicken with garlic powder, onion powder, salt, and black pepper.
- Lock the lid in place
- Set the valve to Sealing
- Choose Manual and cook on high pressure for 8 minutes
Once done, allow the pressure to naturally release for 10 minutes, then do a quick release to release any remaining steam. Transfer the cooked chicken to a cutting board and let cool slightly.
🍝 Step 3: Cook the Cheese Tortellini
While the chicken cooks, prepare cheese-filled tortellini according to package instructions. For best results, add a splash of olive oil to the boiling water to prevent sticking. Once tender, drain and rinse under cold water to stop cooking, then transfer to a large mixing bowl.
🔪 Step 4: Cube the Chicken and Combine Ingredients
Cut the cooled chicken into 1-inch bite-sized cubes. Add them to the bowl with the cooked tortellini.
Next, add:
- ½ cup halved grape tomatoes
- ⅓ cup pitted black olives
- 2 more tablespoons of Italian dressing
- Salt and pepper to taste
Gently toss until everything is well coated with dressing.
🍢 Step 5: Assemble the Skewers
Using 10–12" wooden skewers, thread the ingredients in this pattern (or as preferred):
- 1 black olive
- 1 grape tomato half
- 1 chicken cube
- 1 tortellini
- 1 chicken cube
- 1 tortellini
- 1 grape tomato half
- 1 black olive
Repeat until all ingredients are used.
Tip: For a clean presentation, begin and end each skewer with the same ingredient, like olives or tomatoes.
📌 Optional: Serve Chilled or Grilled
These skewers can be served cold as a pasta salad on a stick, or briefly grilled to warm and slightly char the chicken and tortellini. They’re excellent with extra Italian dressing or a side of pesto for dipping.
Tip: When finished assembling the skewers, toss any remaining ingredients in a medium bowl with a little Italian dressing to serve on the side.
- To serve, transfer the finished skewers to a platter and offer the remaining Italian dressing on the side. Enjoy!

🧊 How to Store Chicken and Tortellini Skewers (and Keep Them Fresh)
Proper storage ensures your leftover skewers stay flavorful, safe to eat, and ready for quick lunches or snacks. Follow these tips for the best results:
❄️ Cool Before Refrigerating
Let the skewers come to room temperature before storing, but don’t leave them out for more than 2 hours to avoid bacterial growth.
🥡 Use Airtight Containers
Store the skewers in an airtight container or wrap them tightly in plastic wrap or foil. This prevents them from drying out and helps lock in flavor.

🥗 Keep Wet Ingredients Separate
If your skewers include juicy ingredients like grape tomatoes or olives, consider storing those separately. This helps maintain the ideal texture of the chicken and pasta.
🏷️ Label and Date for Safety
Write the prep date on the storage container so you can easily track freshness. Consume within 3 to 4 days for best quality and safety.
🔥 Reheat Properly
To reheat, warm the skewers in the microwave or oven until the chicken reaches an internal temperature of 165°F (74°C). Avoid overcooking to keep the tortellini tender and moist.
🔥 Pro Tips for the Best Chicken and Tortellini Skewers
Make your pasta and chicken skewers truly unforgettable with these expert tips. From marinating to grilling, each step helps ensure maximum flavor and perfect texture:
1. Soak Wooden Skewers First
If you're using wooden skewers, soak them in cold water for at least 30 minutes. This prevents burning or splitting on the grill.
2. Keep Ingredient Sizes Consistent
Cut chicken and other ingredients into uniform, bite-sized pieces. This helps everything cook evenly and prevents overcooked or undercooked bites.
3. Marinate for Maximum Flavor
Don’t skip the marinade! Let the chicken soak in Italian dressing (or your favorite marinade) for at least 30 minutes or up to overnight to boost tenderness and taste.
4. Pre-Cook the Tortellini Just Right
Boil tortellini until al dente, then rinse under cold water. This ensures they won’t fall apart on the skewer or get mushy on the grill.
5. Alternate Ingredients for Visual Appeal
Thread the ingredients in a repeating pattern: chicken, tortellini, tomato, olive, etc. It looks great on the plate and creates a delicious balance in every bite.
6. Use Medium-High Heat on the Grill
A hot grill helps sear the chicken and adds delicious char marks. Preheat your grill to medium-high before placing skewers down.
7. Oil the Grill Grates
Brush your grill with oil or spray with a non-stick grill spray to prevent the tortellini or chicken from sticking and tearing during cooking.
8. Baste While Grilling
Keep the skewers juicy and flavorful by basting with extra marinade or a light coat of olive oil as they cook.
9. Use a Meat Thermometer
Always check that your chicken reaches a safe internal temperature of 165°F (74°C) to ensure it’s fully cooked through.
10. Let Skewers Rest Before Serving
After grilling, let the skewers rest for 3–5 minutes. This allows juices to redistribute in the chicken, making it more tender and flavorful.
With these tips in mind, your Tortellini & Chicken Skewers will turn out perfectly delicious every time!
