- -1 pound chicken breast, grilled and diced
- -1 cucumber, diced
- -2 tablespoon oregano
- -½ red onion, diced
- -½ cup feta cheese
- -1 tablespoon red wine vinegar
- -1 cup quartered cherry tomatoes
- -3 tablespoons olive oil
- -2 tablespoons lemon juice
-1 tablespoon sliced kalamata olives
Note: Optional - One can of Chick Peas
-Salt and pepper to taste
1. In a large bowl, combine chicken, cucumber, red onion, feta cheese, and Chick Peas.
