The avocado egg sandwich is rather easy to make and requires very few ingredients, here they are: 1 slice of bread (whole-wheat is preferred) ⅓ of an avocado 1 tablespoon Extra Virgin Olive Oil 1 teaspoon Lemon Juice A pinch of salt & pepper to taste
How to make a QUICK sandwich
First, you want to cut your avocado in half then take out its pit. You can scoop the half without the pit onto a small plate or bowl for the sandwich. Next, you want to m a k e y o u r hard-boiled egg by placing the egg in a saucepan filled with cold water.
Bring to a boil over medium-high heat, then reduce heat to simmer for 10 minutes. Drain the hot water and fill the saucepan with cold water to cool your egg completely. Peel the shell off of your hard-boiled egg (it should slide right off if you've done it correctly). Chop the avocado into small pieces (or mash avocado like guacamole). Mix avocado, lemon juice, olive oil, salt & pepper together in the bowl or onto a plate where you previously placed avocado. Toast bread until desired crunchiness is reached and spread avocado mixture on toast. Place lettuce on top of avocado mixture and place the hard-boiled egg on top of lettuce

2 Slices Whole-Wheat Sandwich Bread
⅓ AVOCADO
1 teaspoon Extra Virgin Olive Oil
1 teaspoon Lemon Juice
1 Hard Boil Egg
1 tablespoon Chopped Celery
Salt & Black Pepper
1 Leaf Lettuce
Directions:
1. Cut avocado in half, remove pit and scoop avocado into a small bowl or onto a plate for your sandwich.
2. Make a hard-boiled egg by placing an egg in a saucepan filled with cold water. Bring to a boil over medium-high heat, then reduce heat to simmer for 10 minutes. Drain the hot water and fill the saucepan with cold water to cool your egg completely. Peel the shell off of your hard-boiled egg (it should slide right off if you've done it correctly).
3. Chop the avocado into small pieces (or mash avocado like guacamole).
4. Mix avocado, lemon juice, olive oil, salt & pepper together in a bowl or onto a plate where you previously placed avocado.
5. Toast bread until desired crunchiness is reached and spread avocado mixture on toast. Place lettuce on top of the avocado mixture and place the hard-boiled egg on top of lettuce.
