- 3 T. butter, melted
- 2 t. pure vanilla extract
- 1 c. Greek yogurt
- 2 T. honey or maple syrup
- 2-3 large peaches, sliced
- Maple syrup, for serving

- Pour the wet ingredients into the dry ingredients and whisk until a smooth batter forms.
- If using a silicone mold, pour one-fourth of the batter into the mold and bake until puffed and golden brown, approximately 10-15 minutes. Repeat for all 4 waffles.
- If using a waffle iron, lightly oil the waffle iron. When the iron is hot, fill per the manufacturer’s instructions and cook until set repeating until the batter is gone.
- In the meantime, mix the Greek yogurt with the honey or maple syrup.
