- ¼ – ½ c. arugula, to taste (optional)
- ¼ c. pistachios (optional)
- Dressing Ingredients:
- ½ c. red wine vinegar
- 1 T. sugar
- 1 T. dried oregano
- 2 t. sea salt
- 1 t. black pepper
- 1 C. extra virgin olive oil

- Drain the pasta and rinse with cold water.
